1 1/4 lb. sirloin steak, cut into 1 1/2-inch chunks
4 red chiles, each cut into 6 pieces
1/3 c. roasted salted cashews, roughly chopped
1/4 c. cilantro, chopped
2 tbsp. lime juice
Directions
Cook rice. Heat grill on medium-high. In bowl, combine soy sauce, maple syrup, and rice vinegar.
Thread pineapple chunks onto skewers. Thread sirloin steak chunks and red chiles onto other skewers; brush with oil and season with 1/4 teaspoon each salt and pepper.
Grill kebabs, turning occasionally, 4 minutes. Brush with sauce and grill until pineapple is lightly charred, 2 minutes, and steak reaches desired doneness, 3 to 4 minutes for medium- rare. Transfer to plates.
Fluff rice. Fold in cashews, cilantro, and lime juice. Serve with kebabs.
